When should I be changing strings on my Uke if I play everyday for at least one hour ?

I think it depends on a. the strings you use and b. how you play.
I use aquilastrings. I did over a year with one set. After a few months you don't have the crispyness like in the beginning, but the sound and volume are still ok.
If you use a metal low G, my experience is that they loose quicker their brightness. But with a cloth and some mild soapy water you can clean them.

I've never played with a pick, always with my fingers, but I think that your strings will be more worn with playing with a pick

At some point, you will notice that the strings start sounding dull. For me, it's usually around six months. That's when I would replace them, but it's really a matter of personal preference. If you still like the way they sound, I don't see a real reason to change them unless you want to try out a different set of strings.
