If you keep your ukulele in a humidified room, being careful to keep humidity levels consistent, is it all right to keep your ukuleles out of their cases to have them more available for playing?

As long as you have an accurate way to measure and maintain the right humidity levels then its fine to leave the instruments out. Just be sure to maintain a high enough humidity and realize that depending on the time of year when you might be using heating or cooling in your home the relative humidity will change depending on how much you are heating/cooling the home and the relative humiditiy of the air outside of the home.
Using a good hygrometer to measure the relative humiditiy inside the room and using a good room humidifier should do the job.
